Four Ingredient Vegetarian Lasagna

  • 1 24-ounce jar marinara sauce (about 3 cups)
  • 12 whole grain lasagna strips, rippled edge, uncooked
  • 16 ounces lowfat cottage cheese
  • 8 ounces shredded mozzarella cheese (2 cups)
  1. Preheat oven to 375°F.
  2. Lightly coat a 9 x 13 inch baking dish with vegetable oil spray.
  3. Spread ¾ cup of the marinara sauce to cover the bottom surface of the dish.
  4. Place 4 strips of uncooked lasagna noodles over the sauce.
  5. Top the noodles with ¾ cup of the marinara.
  6. Spread 1 cup cottage cheese over the sauced noodles and sprinkle with ½ cup mozzarella cheese.
  7. Repeat this process until you have four layers of noodles.
  8. Sprinkle the remaining 1 cup of mozzarella cheese over the sauced noodles.
  9. Cover the pan with aluminum foil. If the cheese is close to the top edge of the pan, it’s a good idea to spray the inside surface of the foil with vegetable oil spray to prevent the cheese from sticking to the foil.
  10. Place covered lasagna into the preheated oven and bake for 40 minutes.
  11. Remove the lasagna from the oven, remove the foil, and return the lasagna to the oven to bake for another 10 – 15 minutes, until the cheese on the top is bubbled and browned slightly.
  12. Remove the lasagna from the oven and let it rest at room temperature for 10 minutes before serving.
